Garlic Is As Good As Ten Mothers (1980) is a documentary film about garlic directed by Les Blank. The entire saying is, “Garlic is as good as ten mothers to keep the girls away.” But, when you roast garlic, it becomes sweet and mellow, attracting the girls and their mothers. This can sit on your counter or stove top several days and you’ll find all kinds of ways to use roasted garlic in your garlic dishes. As a plus, it’s fun to squish the melted cloves out of the garlic head after roasting – if the garlic is still hot from the oven, swaddle it in a dish towel and squeeeeeeze.

Use this in recipes calling for garlic when you want a flavor that's more mellow than freshly minced raw garlic.
Slice off the root end of the garlic. Nestle garlic in some foil in a small skillet or pan. Pour some good olive oil all over the garlic. Roast at 350 or 375 until nicely browned and the pods start popping out. Squeeze the pods out on a cutting board and mash the soft garlic, discarding the hard parts that formed on top. Or cool, and use in almost any recipe that calls for garlic where you want a sweet, caramelized garlic flavor. Use in garlic butter, red sauces, etc.
